So I got to thinking the other day, we can use some recipes in this great arsenal of homebrew club forums we have here. With the hot weather already here, I have a marvelous summertime recipe that is sure to please not only yourself and fellow craft beer drinkers, but all of your non craft beer drinking friends and family who might enjoy a Bud Lime or something similar.
The name of this beer is called “Rix Lime Blonde” and comes from our very own club member, Rick Felser. Just to toss in a little history here, before brewing, Rick has always been a fan of lime beers and was determined to brew his own once he got the hang of this addicting hobby. With a lot of extensive research, he finally came up with a recipe, brewed it multiple times and tweaked it to perfection. (It’s not often that you do not see this beer on tap at his house) He won a gold medal in the Erie County Fair homebrew competition in 2015 with this one.
A couple of months ago I had the pleasure to brew his beer on my own and still have it on tap today. This beer has a nice speedy grain to glass time frame and comes out pristine clear with almost no effort. It has a solid true blonde ale backbone going on with the fresh lime flavor covering it all like a snug security blanket. Hops are simply used to help balance out the sweet malt with very little bitterness noted and little to no hop flavor and aroma. The lime is meant to be the star in this beer.

Bitterness: 18.8 IBUs
Boil Time: 60 min
Est OG: 1.039 (9.6° P) Mash Profile: Single Infusion, Light Body, Batch Sparge
Est FG: 1.008 SG
ABV: 4.0%
Ingredients:
8 lbs Brewers Malt 2-Row (Briess) (1.8 SRM) (Not Pale 2-row, it’s a little darker and maltier)
1 lbs Munich 10L (Briess) (10.0 SRM)
8.00 oz Caramel Malt - 10L (Briess) (10.0 SRM)
0.40 oz Centennial [10.0%] - Boil 60 min
0.75 oz Cascade [5.5%] - Boil 5 min
Zest of 4 Limes (10 min)
Juice of 2 Limes (10 Min)
1 pkgs Safale American (DCL/Fermentis #US-05)
Mash at 151°F for 90 minutes.
